WAGYU USHITOMI GINZA Cherf, Katsuyoshi Nagai.
We craft our dishes using carefully selected seasonal ingredients and premium Kuroge Wagyu beef, prepared through a variety of cooking techniques.

②What values or principles are most important to you as a restaurant?

What we value most is maintaining the right sense of closeness and connection with our guests.

③ How do you select your ingredients, and what do you prioritize when sourcing them?

We follow the traditional Japanese concept of “hashiri (early season), shun (peak season), and nagori (late season)” when selecting seasonal ingredients.
Our Kuroge Wagyu is primarily sourced directly from trusted producers.

④ What makes your restaurant unique compared to others?

Our menu is based on Japanese cuisine and designed so that guests can enjoy Kuroge Wagyu in a light and balanced way—right to the very end of the meal.

⑤Do you have any particular approach or philosophy when it comes to plating and presentation?

We keep the presentation simple and unpretentious, allowing the ingredients to speak for themselves.

⑥ How do you curate your selection of alcoholic beverages?

We focus on Japanese sake and whisky, and also offer a curated selection of wines.
Since our cuisine is rooted in Japanese tradition, we offer ochoko (sake cups) in various sizes and patterns, so guests can choose one that suits their preference.

⑦ Can you tell us about your attention to interior design, tableware, and the overall dining atmosphere?

Our interior consists solely of counter seating to create a sense of unity and intimacy. The space was designed with close interaction between the chef and guests in mind.

⑧ What inspired you to become a chef?

Quite simply, I love to eat—and I love to cook.
And nothing brings me more joy than hearing guests tell me directly that it was delicious.

⑨ What kind of guests would you like to welcome?

I’m happiest when guests feel relaxed and at ease—no need for formality.

⑩ Are there any rules or things that are not allowed in your restaurant?

We welcome all kinds of guests,
but we kindly ask that guests refrain from wearing shorts, sandals, or heavy perfume.
Please note that we are unable to accommodate food allergies, vegan, or vegetarian requests.
We are strictly reservation-only and do not accept walk-ins.
