Greetings from the Head Chef, Tatora Ito
Matoi Ginza is a relatively new restaurant that opened in November 2022 in Ginza, one of the world’s most competitive gourmet districts. Located on Namiki-dori, we offer a uniquely Japanese atmosphere in a special setting.
Our cuisine showcases carefully selected Wagyu from across Japan, sourced directly without passing through the usual wholesale markets like Shibaura.
We are committed to sharing the excellence of Japanese Wagyu not only within Japan but also with the world.

②What values or principles are most important to you as a restaurant?
Unlike many exclusive restaurants where customers must adjust to the restaurant’s schedule, we prioritize flexibility to cater to our guests’ needs.
We offer multiple course options, allow guests to choose their preferred dining time, accommodate allergies and dietary restrictions, and provide personalized service for special occasions.
We provide our cuisine and space tailored to each customer’s situation and needs.

③ How do you select your ingredients, and what do you prioritize when sourcing them?
We proudly source our Wagyu from Ogiyan Meat Shop, a highly sought-after supplier in Tokyo known for its exceptional meat quality and marbling.
Additionally, our menu features seasonal seafood and produce, all sourced from top-tier domestic suppliers.

⑤Do you have any particular approach or philosophy when it comes to plating and presentation?
We pay great attention to aesthetics, arranging ingredients and garnishes meticulously to ensure each dish is as visually stunning as it is delicious.

⑥ How do you curate your selection of alcoholic beverages?
Our wine cellar holds over 400 bottles, primarily from France, Italy, and California.
We also offer rare sake, including Juyondai and Kokuryu limited editions.
as well as a curated selection of shochu and original cocktails to cater to diverse preferences.

⑦ Can you tell us about your attention to interior design, tableware, and the overall dining atmosphere?
Our luxurious and spacious dining environment is enhanced with carefully selected Japanese aesthetics, including bonsai from Bonsai Town in Saitama.
Our tableware is also carefully curated, featuring Ko-Imari, Arita-yaki, and pieces by renowned artisans, including custom-made exclusive dishes.


⑧ What inspired you to become a chef?
From the moment I started in the food industry, I found joy in interacting with customers and creating dishes that delighted them.
Witnessing guests enjoy my cooking firsthand inspired me to fully immerse myself in the culinary world.
My passion for Wagyu began over 10 years ago when I visited Kyushu for Wagyu procurement. Seeing live cattle, understanding the process of butchery and distribution, and ultimately serving it to customers made me appreciate the journey of Wagyu from farm to table.
Later, when opening Matoi Ginza, I had the opportunity to visit Kobe, where I learned about the rich history of Tajima Wagyu directly from those handling it.
This experience reinforced my belief that Japanese Wagyu is the finest in the world, and I am honored to share it with our guests.
⑨ What kind of guests would you like to welcome?
We do not believe in selecting customers—we strive to be a restaurant that customers choose for themselves.
Our aim is to continue evolving and providing exceptional dining experiences that resonate with our guests.

⑩ Are there any rules or things that are not allowed in your restaurant?
・Excessive perfume is not allowed.
・Children must be able to eat a full adult portion of the course menu (except in private rooms).
