I’m Kazuki Ishikawa.
Vesta has proudly served customers for 10 years since its establishment.
Our signature dish is the Kamado Charcoal-Grilled Steak, featuring the finest Sanda Wagyu, cooked in a uniquely designed kamado oven.
Our cuisine is dedicated to enhancing the natural flavors of premium ingredients, offering a dining experience that blends extraordinary flavors with an unforgettable atmosphere.

②What values or principles are most important to you as a restaurant?
We never forget our gratitude towards our customers.
There are countless restaurants in the food industry, yet each customer chooses Westa among them. This appreciation is irreplaceable to us.
Whether on rainy days, in the scorching heat, or from distant locations, customers make their way to our restaurant.
For that reason, we place the utmost importance on welcoming with sincerity, serving with sincerity, and ensuring a heartfelt departure.

③ How do you select your ingredients, and what do you prioritize when sourcing them?
No two ingredients are ever exactly the same—their flavors, textures, and characteristics vary depending on climate and environment.
Each Sanda Wagyu cow has unique size, personality, and lineage, making every cut of meat distinct.
We embrace these differences and showcase the individuality of each ingredient through our cuisine.
Beyond Sanda Wagyu, we source seasonal produce directly from farmers and fishermen across Japan, ensuring exceptional freshness.
We also personally visit producers, selecting and purchasing ingredients firsthand to guarantee the highest quality for our guests.shine.

④ What makes your restaurant unique compared to others?
Only a strictly regulated selection of Wagyu can be labeled as “Sanda Beef”, and the number of cattle available is highly limited.
At Westa, we have a direct partnership with the farm, allowing us to carefully select premium Sanda Wagyu while working closely with producers.
As a result, guests can choose from a variety of Wagyu cuts, rather than being limited to just a few select portions.
Beyond steak, we offer diverse cuts and preparations, allowing guests to experience the full richness of Sanda Wagyu.
⑤Do you have any particular approach or philosophy when it comes to plating and presentation?
We believe food should be a feast for the eyes as well as the palate.
We focus on balance, color harmony, and plating techniques that enhance the dining experience.
Additionally, certain dishes are carefully layered—similar to a cocktail glass—where the order of ingredients influences the taste experience.

⑥ How do you curate your selection of alcoholic beverages?
Our cuisine features delicate flavors, which pair exceptionally well with French wines, particularly Burgundy wines, which we carefully select from renowned producers.

⑦ Can you tell us about your attention to interior design, tableware, and the overall dining atmosphere?
Our restaurant envelops guests in an atmosphere of champagne gold, creating a truly extraordinary experience.
We feature Ryuzen knives, crafted with traditional Echizen craftsmanship, and tableware from world-class brands like Meissen and Royal Crown Derby.
Even our chandeliers are pieces by Émile Gallé, ensuring that every element of the space embodies luxury and refinement.

⑧ What inspired you to become a chef?
I was drawn to the opportunity to work with the highest-quality ingredients, including Sanda Wagyu and seasonal delicacies.
Engaging with these exceptional ingredients allows me to continuously refine my skills and expand my culinary creativity.
⑨ What kind of guests would you like to welcome?
We aspire to welcome guests who appreciate and are passionate about Japanese cuisine and culture.

⑩ Are there any rules or things that are not allowed in your restaurant?
We may not be able to accommodate last-minute dietary restrictions or allergies on the day of the reservation.
Children under the age of 10 are not permitted in the dining area.
Private room fee: ¥5,000 per room.
Cancellation Policy:
100% charge for same-day cancellations.
50% charge for cancellations made within 7 days.
